I am glad am on track with my resolution of health and fitness. I have heard that if you “Do something for 21 days consecutively, it will become a habit.” That is exactly where I am, completely immersing myself in the healthy lifestyle.
Usually after my evening run, thanks to my Office team, I follow the rule to have dinner like a popper. Lately, I have been enjoying making easy salads for dinner time. Something easy, because of time, yet filling. But this shouldn’t fool you, just because it is easy, doesn’t mean it tastes bland.
So here is the recipe I followed for my potato & bacon salad.
What you will need:
// Peeled potatoes // Bacon // Eggs // Green Pepper // Onion // Garlic //Salad Cream // Ground Black Pepper // Salt
What to do next:
// Boil the potatoes and the eggs. I didn’t do that in the same bowl but I guess if you’re looking for efficiency, knock yourself out. Boil for about 20 minutes or till they become slightly tender with a pinch of salt thrown into the boiling water
// Go on to fry the bacon till it browns
// For the green pepper and onions, cut into tiny pieces. Then grate the garlic
// Once all the above is done, cut the potatoes into cubes, eggs into small chunks and bacon into tiny pieces. Mix all the above including the green pepper, onions and garlic.
// Lastly mix with black pepper and salad cream
